In Italy the festival of white truffles is opened
It happens on Saturdays and Sundays for the whole November, since the second Saturday of the month, drawing attention of gourmands all over world. The white truffle is the pride of Italy, and white truffles from this region have achieved name «King of food» (Tuber Magnatum Pico), they are condisered to be the most valuable mushrooms. It is verily here the biggest white truffle in the world has been found with the weight of 2,5 kg. The local mushrooms are known not only for their sizes but also with quality. The white truffles from San Miniato are offered in the best restaurants of the world. They are met rarely and obtain deeper aroma than black truffles from France, and are thought to be tastier than French ones, but their price sometimes excesses two thousand euro for a kilo.
The harvest season for these mushrooms in Italy falls into November. White truffle does not live for a long time, it grows at the roots of trees and starts fading immediately after taking from the ground. Even in the perfect conditions it may save its eating qualities only for ten days.
By the way, people often try raw white truffles, preliminary cutting them into the thin slices. However, there are many dishes made from these delicious mushrooms.
In San Miniato before annual festival people prepare with the special accuracy: they organize different flight tasters and trainings where explain how to choose and cook truffles, and also arrange truffle auction where every person who wishes to do it, may become the owner of favorite mushroom, paying great amount of money. He also may hunt truffles under the patronage of experienced trufalau (truffle-hunter).
